Cookie Help

With the corn therapy bags done, (and all those corn husks for the compost bin) I'm on to a cross-stitched stocking for my Dad. I certainly don't have time to do a complete stocking in cross-stitch, but I found some really cute patterns in some old magazine to do just a cuff with, and I'll make the rest from fabric.

I plan on filling it with cookies, and I have a really, really good sugar cookie recipe, but just one kind is sort of boring. Does anyone happen to have a good cookie recipe, or can point me to a good one? It has to be simple ingredients though, nothing extravagant that I'll have to buy. (ok, sorry, like you know what's in my cupboards!) Just no nuts, cream cheese, fruits or fancy extracts and stuff.

I know, I know...hard to make anything but sugar cookies with basic flour, sugar and eggs, but I'm hoping someone has something simple they've always made that's awesome.

Tall order. Why do men have to be so difficult when it comes to gifts?

Tina,
My favorite recipe calls for cream cheese. Sorry.
I do know that the more fat you add and the thicker you cut them, the moister they are!
Good luck and don't work too hard, Tina!

Tina,
I make shortbread cookies every Christmas. Insanely simple to make but they taste so rich you'd never guess they take only five ingredients. Here's a good recipe:

Good luck, and yes, men are usually a pain in the a** to get gifts for :-)

Wow, you gals are quick!

Sissy, it seems lots of peoples' fav cookie recipes have cream cheese, I just don't happen to have any at the mo. I mean really, who doesn't like cream cheese?

Colleen, perfect! Thank you, exactly what I was looking for!
Of course, I need to get the stocking finished before I'll get to play in flour. :) If I finish in time and it looks good, I'll make one for SM too.

I found your blog in my search for a good sugar cookie recipe. WOuld you share yours? For your stocking, how about colossal cocoa crinkles? You'll need: 1/2 c. cocoa powder, 3/4 butter, 1 c. sugar, 2 c. flour, 2 eggs, 1 Tbp. vanilla,1 tsp baking soda, 1 tsp. baking powder, 1/4 tsp. salt and conf. sugar to roll them in.
Melt the butter, add cocoa. Remove from heat and add sugar. Let cool 10 minutes. Mix flour, soda, baking powder and salt in separate bowl; beat eggs in a separate bowl, then add to cocoa mixture, along with vanilla. Gradually stir in the flour mixture until combined, refrigerate dough at least 2 hours or overnight.
Roll dough in to 2" 1 1/2" balls and roll in conf. sugar. Bake on ungreased cookie sheets 2 " apart at 350 for 10-15 min and cool on wire racks. They're delicious!

oops! the balls should be 1 1/2" - using about 2 Tbp of dough each.
